Ingredients: 10 Clementines / 1 Lemon / 2 Olives / Ice / Vodka / Gin / Champagne / Elderflower Cordial / Vermouth
Equipment: 2 x Martini Glasses / 2 x Champagne Glasses (can double up so you can ply your better half with drinks) / Jiggers or digital scales to measure the liquids.
Prep Clementine Syrup: 70g clementine juice mix with 60g sugar / Infused gin with Christmas tree / 80g clementine juice

• 30ml Gin
• 20ml Clementine Juice
• 10ml Clementine Syrup
• Champagne - top
Method:
Build-in shaker, over ice.
Stir 20 times to chill and double strain into a Champagne glass. Top with bubbles and a dime of clementine zest.
